The 5OS Project Shiraz Viognier 2016
There’s a rugged little block of Shiraz right at the base of the Willunga Escarpment that is owned by a guy who needs a place to hide on weekends. Feels almost like it should be covered in San Pedro it feels that dry and the soil’s that rocky. I love the Rhone, especially the exotic, alluring reds of the North. When we set out to make this wine this is where our minds were and when we stumbled across the fruit from this site we knew we had the tools. It takes a few years to soften and for most it isn’t for a warm day on the lawn at the Victory, but when in the right company this is such a great bottle of wine. For a few boxes of Sparkling Ale, Bossy generously donated a few hundred kg of Viognier as well.
About The 5OS Project
This is essentially our ‘Home Brand’. We make these wines ourselves and farm out others to mates, with the intention to create a range of wines that have heaps of drinkability but not at the expense of varietal, regional and vintage characteristics. They should also look the part, embracing the talent of the respective artists whilst encouraging them to find their own beat.
Aromatics: | Brooding, Opulent and somewhat challenging. Black Liquorice with a dust of VA |
Palate: | Darkest of chocolate albeit not without a caramel like sweetness almost salted liquorice |
Finish: | Not much fruit left to speak of, real good length, harmonious, and super satisfying |
Cellaring: | Best before 2025 |
