The 5OS Project Adelaide Hills Pinot Rosé 2021
This was our first attempt at making Rosé from Hill’s Pinot and we were pumped when Mark found us a little parcel of Sparkling clone not far from the Pub in Echunga. If you’re the type who likes to objectify what’s in the bottle, Pinot Rosé is a tough audience, it’s not easy to stabilise the colour and if you leave it on the skins for any amount of time you’re more often than not going to bring forth a hint of tan in the hues. This we got, albeit not as much as expected as we really wanted as much flavour and punch as we could whilst keeping it as faint as possible on the eyes. I really like this wine, actually took a bottle fishing with Twig last week, it’s full of lovely candied strawberries and a wicked twang that almost reminds you that there’s roughly 8 standard drinks to a bottle.

About The 5OS Project
This is essentially our ‘Home Brand’. We make these wines ourselves and farm out others to mates, with the intention to create a range of wines that have heaps of drinkability but not at the expense of varietal, regional and vintage characteristics. They should also look the part, embracing the talent of the respective artists whilst encouraging them to find their own beat.

Aromatics: Rosewater, starbursts, approachable and attractive
Palate: Quite a full palate, candied watermelon, rosewater
Finish: Rounds out incredibly well, lingering sweetness and lollies that persist
