Volatile acidity is a measure of the low molecular weight (or steam distillable) fatty acids in wine and is generally perceived as the odour of vinegar. Winemakers (that’s us) are usually most concerned with acetic acid, which accounts for more than 93% of steam distillable acids in wine… As per the AWRI. Volatilisation, pronounced with an F according to Lucas, and a myth according to Kochy, is the flash word put to SG’s suggestion that if we put our volatile Old Vine Shiraz from 19 vintage over fresh skins from 2020 the VA will noticeably drop and additionally the palate will soften. SG 1 MK 0 and a special mention to LA for the cool word, albeit none of us has been able to confirm its legitimacy.

We make these wines ourselves and farm out others to mates, with the intention to create a range of wines that have heaps of drinkability but not at the expense of varietal, regional and vintage characteristics. They should also look the part, embracing the talent of the respective artists whilst encouraging them to find their own beat.
